Bitter Margarita
Inspired by the Campari and mezcal-spiked Bitter Margaritas at Walter’s in Brooklyn and Leon’s in New York, our version uses AMBER Aperitivo to layer the lingering bitterness of gentian with tart and woody quandong—a combination that marries perfectly with the deep smokiness of mezcal.
Ingredients
45mL blanco tequila
30mL lime juice
20mL AMBER Aperitivo
15mL mezcal
15mL ORANGE Triple Sec
1 teaspoon sugar syrup
Garnish
Lime wedge, sugar, salt

Method
① Rub the lime wedge around the rim of a rocks glass ② Combine one part sugar with one part salt in a saucer, and roll rim of glass to coat ③ Combine all ingredients in a cocktail shaker with ice and shake until chilled ④ Strain into the prepared rocks glass over ice and garnish with a lime wedge.
