Baby Turtle
Made famous by Trick Dog in San Francisco, the Baby Turtle combines tequila with citrus and a red bitter aperitivo to add complexity. In our version, we use DAVO PLUM Aperitivo to add tartness from the Davidson’s plum and rosella, a lick of heat from mountain pepper and a subtle but lingering bitterness.
Ingredients
60mL reposado tequila
20mL DAVO PLUM Aperitivo
20mL lime juice
20mL grapefruit juice
20mL aquafaba
15mL cinnamon syrup
2 dashes saline solution
Garnish
Ground cinnamon
Glass
Rocks glass
Method
① Add the tequila, DAVO PLUM Aperitivo, lime juice, grapefruit juice, aquafaba, cinnamon syrup, and saline solution to a cocktail shaker and dry shake without ice until foamy ② Add ice and shake until chilled ③ Strain into a rocks glass filled with ice ④ Garnish with a dusting of ground cinnamon.
