      Port Light
    The Port Light cocktail originated at the Kahiki Restaurant in Columbus, Ohio in the 90’s, and has since been immortalised in ‘Beachbum Berry Remixed’ by Jeff ‘Beachbum’ Berry. In our version, we add in CITRINE Aperitivo to layer the sweetness of bourbon and tropical fruitiness with deep earthy bitterness, to make it a truly ‘aperitiki’ cocktail.

      Ingredients
    45mL bourbon
    30mL CITRINE Aperitivo
    30mL lemon juice
    15mL passionfruit syrup*
    15mL pomegranate juice

      Garnish
    Melon ball

      Glass
    Highball glass

      Method
    ① Add the bourbon, CITRINE Aperitivo, lemon juice, passionfruit syrup, and pomegranate juice to a cocktail shaker filled with ice and shake until chilled ② Strain into a highball glass filled with ice ③ Garnish with a melon ball.

    *  Combine the pulp of two passionfruit with two teaspoons of caster sugar, simmer until syrupy, then strain.
