WALNUT Amaro

WALNUT Amaro balances the earthy, tannic bitterness of unripe green walnuts with the sweetness of figs, and the roasted coffee-like aromas of wattleseed. Subtle vanilla rounds out the bitterness, creating a smooth and lingering finish.

Nocino is a traditional Italian walnut digestivo made from green walnuts harvested early in the season. While both feature the distinctive green walnut flavours, WALNUT Amaro is designed to be a balanced amaro rather than a traditional sweet walnut liqueur.

The WALNUT Amaro is a more complex and bittersweet expression, that uses the green walnuts together with roasted wattleseed, figs and vanilla to build dimension and balance.

It is delicious neat, over ice, in Old Fashioneds, Negroni variations, Black Manhattans, espresso cocktails, Boulevardiers and dessert-style drinks.

Young, green walnuts contribute higher tannins, deeper bitterness and more complex aromatic compounds that are not present in the mature nuts. The tannins are particularly important as they create a slightly dry mouthfeel, and allow flavours to persist.
